100% Kona Coffee is available on the market "ungraded" or in any one of 5 grades.
Ungraded quality is simply as it comes off the field--beans of all shapes, sizes, colors,
and pieces all mixed together.
The grade names are: Extra Fancy (the top grade), Fancy, #1, Select, Prime.
Certification for grade is done by the State of Hawaii inspectors, not by the farmer or processor.
The higher the grade, the lower the percentage of defects allowed, the smoother the taste.
"Defects" are chipped or broken beans, pieces, off-color beans such as sours, etc.,
that can dramatically change the taste the coffee.
Ungraded or lower grade coffees often have a significant "bite" or strong, bitter taste.
Consistent bean size and consistent color result in the very best and consistent taste.
100% Kona Extra Fancy is the top grade and is very smooth whether in a dark or medium roast.
The dark roast will have a stronger coffee taste but will still have no bite.
The medium roast is more mild, but still with a great, robust taste.
